We were really looking forward to this place, it looked lovely but were a little dissapointed with it.
The terrace was very tight fitting and this made the whole scene uncomfortable.
The food was ok but below standard compared to the rest of the our meals in Carvoeiro.
Karen had the portuguese steak and found it very vinegary, the one I had in O Tasco was far nicer.
The one redeeming feature is the view, fantastic!!!

I have to say that I disagree with you.
There is no restaurant in CVO that has better service than O Castelo.
And although the terrace is tight fitting, the view more than makes up
for it.
I don't know a restaurant with a better view in CVO.
Regarding the food, personally I think that if you are in the Algarve you should eat fresh fish in stead of meat! If you order in advance they will prepare Lobster for you, the way you like it But if you want to eat meat, than you should try the Steak Diana, the Pepper Steak or The Entrecote O Castelo and I guarantee you that Karen will be satisfied.
For starters you should go with the shrimps with garlic or the mushrooms with fine herbs.
And to finish your meal, take one of the crepes with a scoop of ice cream!
Try it again and you will see that it is more to your liking

Oddly your recomendations for food was basically what we had
I had the shrimps in garlic and the steak diana and Karen actually started with the mushrooms. 
My food was fine, nothing amazingly special but certainly enjoyable, Karen unfortunately wasn't happy with either course and after tasting her's I'd agree. The mushrooms were absolutely covered in the herbs giving a very strong flavour that wasn't overly palletable.
During our stay in Carvoeiro this was the only meal we didn't enjoy 100%.
Oh well, each to their own I guess
