Hi
Given the lack of a decent thai restaurant in CVO how easy is it to buy thai ingredients in the supermarkets there for a DIY variety?!
Thinking about things like
Coconut milk; kaffir lime leaves; lemongrass; green curry paste.

Jumbo supermarket in Portimao Aqua shopping centre do lots, Pao de Accucar (Jumbo's smaller supermarkets) in Lagoa has a few bits, there is an aisle of international products between the meat counters and the drinks section.

Pao do acucer (or however you spell it!!) in Lagoa do everything you will need for a good Thai curry, they have an amazing green Thai paste in a sachet which is pretty hot, coconut milk, all the veg etc you would need. I love Thai food and always cook it when we are over.

Fast Thai curry shown to me by a lovely thai lady - Cut up 250 gm chicken (thighs are best, but any bits will do) into bite size pieces - put in a saucepan with a little butter and cover with water - simmer for ~ 20mins until cooked through. Whilst this is cooking, saute 1 onion and a crushed clove of garlic in a saucepan, for 5 mins max, add lemon grass (3 stalks), 4 kafir lime leaves, 2 bay leaves, 4-5 quartered mushrooms, some red or green thai curry paste (or just chilies) half teaspoon of garam masala, 1/2 teaspoon of tamarind paste (optional), mix and saute for a minute or two, add tin of coconut milk, bring back to simmer and cook for 5 mins.
Add the cooked chicken (and the remaining liquid - but dont make it too thin) slowly simmer for 10 mins. You can adjust the hotness using sweet thai chili sauce.

I knew a lovely Thai lady but I can't recall her giving me any recipes

You can find all you need (red/green curry paste, coconut milk, fish sauce etc) in Intermarche - it is my favourite cuisine and we cook it there all the time (though for some of the rarer stuff - tamarind paste etc) best bring it with you.

Thanks very much to all!! Cant wait to get out and start cooking! Always thought my Paella cooked over here was good until I did it with fresh veg, chicken and prawns in CVO and realised how c**p the ingredients are in the uk!!!
