Theres 2 spellings in the dictionary:
Whiskey as spelt by the Irish & Americans
Whisky ( a spirit from distilling malt barley)

I looked up Irish whiskey and saw that Bushmills is the world's oldest distillery of whiskey? (N.Ireland)

Did you know that theres another whisky...its a light gig or a chaise.
So after a couple of glasses of the malt, you can get in your whisky and be whisked off....... 8)

You are correct - Bushmills is the oldest "registered" distillery - it was set up by scots in 1601 who were frequently in NI - They were all bootleg whisky makers who were fed up at being pursued by the lairds and english hosts for revenue. The scots did a lot of that sort of thing - if they couldnt find a decent drop where they were they tended to make it themselves - and it usually flourished - eg Hennessey Cognac!
If you look at the map of NI you will see how close scotland is - the people of NI had a closer relationship with the scots than with the southern Irish - did you know that at one time people would row from scotland to NI to go to sunday church? no wonder they set up a distillery - must have needed a drop after rowing all that way!!

The tudors transplanted protestant scots from the lowland and displaced the resident catholic irish population ( at the point of the sword and pike ) which is why there is such a close relationship between NI and Scotland.

It is also the cause of of the problems that have beset Ireland for 500 years.

After a long and bloody war the Catholic Irish earls ( such as Tyrone ) accepted defeat and many left Ireland for catholic european countries.
