OOOHHH!! Can we get bison tongues here in Carvoeiro? Sounds mouthwateringly good.

Probably not Bison, but perhaps Blue Rock can get Beef Tongues.

:lol: A couple of recipes for your competition Simon:

Smoked prawns stuffed with Boursin

Take smoked prawns and spread with a nice piece of the Boursin, wrap in spinach leaf and then a slice of Prosciutto, place on an oven proof dish and sprinkle with freshly ground black pepper and olive oil, bake in a med hot oven for 25 - 30 mins.
Serve on a bed of fresh, young salad leaves that have been dressed with your favourite dressing.

Mixed smoked platter

One smoked chicken breast sliced into thin slices, smoked salmon, smoked salmon pate, smoked quail eggs and thinly sliced smoked duck breast.

On a plate of fresh, young salad leaves dressed with an olive oil and lemon dressing place the chicken slices, duck slices, quail eggs. spread the smoked salmon with the pate and roll up, place attractively on the plate and sprinkle with a few dried cranberries. Serve with a good mayonnaise.

Search as I might Lesley Jean, I cant find any of these receipes in "How to cheat at cooking" :lol:

I love the sound of the mixed smoked platter. That with a nicely chilled white wine sounds exquisite :lol:

MMMMMMMMMMM!! Am loving the sound of the mixed platter - want to try it now! I will definitely speak to Chris at Blue Rock about the tongues; we spoke to him yesterday as he has run out of the smoked salmon and cheese that we supplied to him mentioning to us that people had been coming in mentioning our forum - so thank you for that. Not long now before production starts here in the Algarve :) .

haha.... when do I ever 'cheat' Bruce.... :roll:

And I think a glass of very cold, slightly sparkling Rose would be better, for me anyway :lol:

Salmon with fresh beetroot

Roast small beetroot wrapped in aluminium foil with a bayleaf at its base for approx 1hr til soft.
Peel skin off and split open the beetroot.
Mix sour cream chopped chives, finely chopped scallions, freshly ground chunky black pepper and juice of 1 lime thorouhly.
On a large platter scatter generously with watercress and top with smoked salmon peices.
Arrange the small beetroots on top of the salmon.
Dollop a spoonful of the sour cream mix into each split beetroot.
Serve with wedges of lime and chunky wholemeal bread and butter

Ive just noticed that recipe of SallyJane's and it sounds mouth wateringly good :P
Salmon is the only smoked food I enjoy.

I'm with you LJ. In Australia they put a slice of pickled beetroot in every burger. Glreppppoogh :mrgreen:
