In reality, the answer to who does the best stone steak would be yourself. You are cooking the steak to your own spec', just as you like it. However, it is perfectly correct that the cut of the steak, time hung etc really makes a world of difference... can't make a silk purse out of a "cows" ear, and all that.
In a similar vein, A Gale do a fabulous chateau briand for two on the stone at the table. Now this is one I would rate very highly indeed.

If you like chateu briand then I would say you should head up to O rustico they do a very nice one there, actually nice place all round if you feel like leaving the village every now and then.
