I can't give a definitive list, but when we have visited in the winter (Nov/Dec/Jan) we found that roughly half the bars and restaurants were open and it's certainly not a ghost town. Some places stay open all year, some close mid Nov and re-open at Christmas, others shut after New Year and re-open mid Feb/March.
You won't be stuck for somewhere to eat or drink, you just might not be able to go to your favourites.
I think Carvoeiro in winter is great - the weather may be a bit unpredictable, but it's still possible to have temperatures in the 70s, the nights are quite cold though and of course it might rain, but the pace is much slower and the village less crowded - I hope you enjoy your trip.

A fair few of the bars and restaurants do shut down in November either for a monthe or three, or just a couple of weeks. We've got children at school here and we can't go so Cassy's bar will be open as much as possible.
Bizarrely, we're finding more residents/locals/long term holidayers are coming out in the eveing now as opposed to the summer - mostly they enjoy the less frenetic atmosphere plus they can actually find a parking place!
Cheers, Mark
