Fish Paste

I was in the Algarve several years ago - but when I was there I found this gorgeous type of fish paste, It was in small tin containers and about four in a pack - sorry I dont know the name!!

But I remember it being everywhere,

If anyone can inform of its name or where I can get it from as Il be there tomoro!!

Cannot remember the name either, but there's plenty of different sorts in Intermarche. Facing the checkouts as you come in, you'll find them in the 3rd aisle on the left. Personally I thought they were great to begin with, but have gone off it now. I think there is very little actual fish in them - lots of other "stuff" tho :cry:

I make my own tuna paste, based on the ingredients list of those little packages you often get with the "cover" at restaurants. Strangely enough, like Richard I seldom eat it there either. But when I serve it to friends as an appetizer here at home, they all rave about it, and I must admit I like it much better too.
Here is the recipe, all quantities are approx., you'll have to experiment according to your own taste:

2 cans Tuna,
1 - 2 Tblsp. Tomato Paste
1 Tblsp. Olive Oil
1 teasp. lemon juice
1 teasp. sugar
1 good dash ketchup
salt, pepper, cayenne pepper to taste
Mix all ingredients till smooth in a food processor or with a hand-mixer.
This makes quite a big batch, but it freezes quite well too.
Serve with baguette or crackers as an appetizer.

The best 'sardine pate' I've found is Manna - it seems to have the highest fish content and that's reflected in the flavour - not to mention all those yummy Omega 3 fatty acids!

Last year Intrmaché stocked a set of theree sardine patés in a box with a photo of Carvoeiro beach on the front. A nice pressie to take back, and not heavy!!!

Question for Heini.

I would like to try your recipe, but do you have to drain the tins of Tuna, or does the recipe need the liquid content. In the UK Tuna is normally canned in brine or oil.

Mike, yes drain the tuna, it needs the addition of good olive oil. Go easy with the ingredients at first, till You find the right consistency and taste for you liking. Enjoy.

We too do not bother to buy the pate anymore but make our own.
Recipe similar to that quoted.

Tastes better and much better value !!!

I love Tuna(& cayenne pepper!) and Heini's recipe sounds great..would it be okay using tinned sardines or sild or tinned salmon?

Ellie, Sardines would be ok, but Salmon will give you a totally diffrent taste.
